Peter Kay and Dave Spikey's unlikely tribute on Phoenix Nights to everyone's favourite canned meat product. And a great store cupboard standby. Also,corned beef hash is a proven hangover dish, accompanied by an ice cold glass of Irn Bru - that other universally acclaimed pisshead's panacea. Posh or refined it ain't, but it sticks to yer ribs!
To serve one hungry, hungover Herbert:
5-6 baby new potatoes, boiled, cooled, cut into rounds
1 tbsp vegetable oil
1 red onion, roughly chopped
340g can corned beef, cut into cubes
Goodly splash of Worcestershire sauce
We're ready to go...
- Heat the oil in a non-stick frying pan and cook the onion for 3-4 mins over a medium heat. Add the potatoes and corned beef, and push down with a spatula to crisp up, cooking for about five mins. Turn the mixture over, trying not to break up the meat and potatoes too much, then add the Worcestershire sauce. Cook for another 5 mins, pushing down to crisp the base again.
- If you want an egg, towards end of cooking time make a hollow in the centre of the pan, and crack egg into hollow and cook to taste
- Season a little, then serve with baked beans and a sprinkling of parsley, if you so wish
